Wherein I start a blog, aimed to be primarily about healthy whole-food eating. In all the years I’ve been vegan, I’ve never preached its value to the world, nor have I tried to convert anyone, one-on-one or online. And I won’t do so here. This is more for my accountability and to show you what works for me. It’s called Whole Food Plant Based eating. When I eat this way I lose weight, gain energy, feel happier, and am totally satisfied. The thing is though, I haven’t been eating well lately, and I crossed the plateau into the number of pounds I swore I never would be. Huffed and puffed right up to and one past that line. Now it’s time to get back on track. My birthday is in early July and I don’t intend to greet it at the heaviest I’ve ever been. To that end, I spent yesterday (a Sunday) prepping (washing and cutting) veggies for the week. Sure, I’d have rather been outside or playing with my family or attending the huge annual festival in my home town. But this was more important. My health is more important. Now my fridge is full of all the good things. I won’t grab something that doesn’t support my goals of weight-loss and health, because there’s nothing bad in there. I have a menu planned for the week. I’m going into this week calm and confident that I can do it. Guess what? So can you, and I will be here to help, even if that’s just by showing you what works for me.
